Healthy Aji Verde

Makes 2 cups | Cook time: 10 minutes (not including soaking)

Ingredients:

  • 1 cup of cashews soaked in water overnight (sub for sunflower seeds if you’re allergic)

  • 1 cup of water

  • 3 jalapeno peppers or 1.5 Serrano chili (seeded)

  • 1 white onion 

  • 1 bunch of cilantro 

  • 1/2 cup nutritional yeast

  • 1 tbsp of white vinegar

  • Juice of two limes

  • 2 cloves garlic

  • 1 tsp of salt

  • 2 tbsp sugar 

instructions

  1. Soak your cashews or sunflower seeds overnight in warm water OR you can soak them in boiling hot water for at least 8 hours. This step is crucial to achieve the creamy and soft texture that will be your base for the sauce.

  2. Next, add everything else into a blender and keep in the fridge for up to two weeks. That’s seriously all it takes.
