Healthy Aji Verde
Makes 2 cups | Cook time: 10 minutes (not including soaking)
Ingredients:
1 cup of cashews soaked in water overnight (sub for sunflower seeds if you’re allergic)
1 cup of water
3 jalapeno peppers or 1.5 Serrano chili (seeded)
1 white onion
1 bunch of cilantro
1/2 cup nutritional yeast
1 tbsp of white vinegar
Juice of two limes
2 cloves garlic
1 tsp of salt
2 tbsp sugar
instructions
Soak your cashews or sunflower seeds overnight in warm water OR you can soak them in boiling hot water for at least 8 hours. This step is crucial to achieve the creamy and soft texture that will be your base for the sauce.
Next, add everything else into a blender and keep in the fridge for up to two weeks. That’s seriously all it takes.
