Healthy Adaptogen Brookies (featuring mushrooms!)
If a cookie and a brownie had a child, it would be a brookie. Now, add Malama Mushrooms Lion’s Mane matcha powder and Cordycep Cacao powder into the mix and you have a powerhouse of a healthy dessert full of adaptogens and flavor.
Ingredients:
Brownie batter
1 egg or flax egg
1 cup of almond butter
1/2 cup of maple syrup or honey
1 tsp of vanilla bean paste
1/4 cup of Cordycep Cacao powder
1/2 tsp of baking soda
1/4 tsp of salt
Cookie dough
1 egg or flax egg
1/2 cup of olive oil
1/4 cup of plant milk
1 tsp of vanilla bean paste
1/2 cup of coconut sugar or monkfruit sugar
2 cups of almond flour or oat flour (I used 1 cup of AP flour, 1 cup of whole wheat flour)
3 tbsp of Lion’s Mane matcha powder
1 tsp of baking soda
1/4 tsp of salt
chocolate chips to your heart’s desire
Instructions:
Preheat oven to 350 degrees
Mix brownie batter ingredients together first in one bowl
in another bowl, start mixing the wet cookie dough ingredients first. Then whisk in the sugar until well combined. Lastly, slowly add the dry ingredients and fold into the batter with a spatula.
In a 8x8 pan, lay down parchment paper. Start by scooping the brownie batter in random spots and then fill the empty spots with cookie dough. Continue layering them evenly. Use a chopstick to swirl the two together and flatten down with your spatula.
Bake for 25-30 minutes. Leave the dessert undisturbed in the pan for 10 minutes after before cutting.
