Crispy Cereal Cauliflower Bites

Hello fellow foodies! Have you ever found yourself in this situation? Stomach, empty. Fridge, uninhabited. Ideas, at a loss? I’ve also been in this exact dilemma…everyday. What the hell do I eat? Luckily, with all this newfound time spent at home, quarantine has forced me to use my brain cells and think outside the box by looking into another box. A cereal box, that is! ;) (Please don’t stop reading because of my corny jokes. I promise there’s actual content here!)

A quick peak into the kitchen revealed only a head of cauliflower that was almost at its end, leftover flour, almond milk, and a crusty box of honey bunches oats crumbs. Does anyone else only eat the bunches in the mix? Asking for a friend.

As I was seconds away from ordering takeout, I realized these minimal, random ingredients are all I need to whip up a quick bite to satisfy my cravings. CRISPY CEREAL CAULIFLOWER BITES

Makes enough for 2 people │Time: 45 minutes

INGREDIENTS

  • 1 cup of all-purpose flour (if you’re GF, Bob’s Red Mill is a great substitute)

  • 1 head of cauliflower, cut into florets

  • 2 tsp nutritional yeast

  • 1 tsp salt

  • 1 tsp garlic powder

  • 1 tsp paprika powder

  • 1/2 cup of crushed cereal (you can use honey bunches of oats, frosted flakes, frosted flakes, etc. Try to avoid the fruity flavored cereal brands like fruity pebbles)

  • pepper to taste

  • oil spray (I use avocado oil)

DIRECTIONS

  1. Preheat oven at 375. Put the cauliflower on a tray and let it bake while pre-heating as this conserves energy (bake for a total of 15 minutes).

  2. While the cauliflower is baking, combine 1 cup of flour with enough nut milk to make a paste-like consistency for the wet mixture.

  3. In a separate bowl, mix all of the dry ingredients (I just crushed mines with a wine bottle lol).

  4. Dip the cauliflower into the wet mixture then dry powder and transfer to a baking sheet with parchment paper.

  5. Lightly coat/spray in oil and put into the oven to bake for 30 minutes, flipping halfway through.
