30-minute Simple Healthy Granola

Makes 4 cups | Cook time: 30 minutes

Ingredients:

  • 4 cups rolled oats

  • 1 1/2 cups slivered almonds (or other nuts)

  • 1/2 cup melted coconut oil

  • 1/2 cup 100% maple syrup

  • ¼ cup nut butter (I used cashew) 

  • 2 tbsp hemp seeds

  • 1 teaspoon cinnamon

  • 1 teaspoon fine sea salt

  • 1 teaspoon vanilla extract

  • Optional additions: dry fruit, coconut, chocolate, different spices, etc

Instructions: 

  1. Preheat the oven to 350 degrees. 

  2. Combine oats, nuts, hemp seeds, cinnamon, and salt together in a large bowl. 

  3. Microwave melted coconut oil, cashew butter, maple syrup, and vanilla extract in a small bowl for 30 seconds or until the coconut oil is melted. If your coconut oil is already liquified, you can simply mix the liquid ingredients together until well combined. 

  4. Add the liquid mixture into the dry oat mixture and stir around until all the oats are evenly coated. 

  5. Lay the granola mixture out flat on a baking sheet and bake for 10 minutes. Take the granola out, use a spatula to mix it well. Repeat this twice for a total bake time of 30 minutes.

  6. Once it’s done, remove from the oven and let it cool for 45 minutes before breaking the mixture to create larger chunks. Store in a jar for 1-2 weeks at room temperature, 2-4 weeks in the fridge, or up to 3 months in the freezer!
