High-protein Lentil Tortillas


Red lentils are a cheap source of plant protein that you can add to anything and find in almost all grocery stores. They’re high in protein, fiber, magnesium, folate, and potassium. These little legumes also maintain a healthy heart and good cholesterol. 

All you need to know is that red lentils are good for your heart, your digestive system, and your blood. These are the ingredients to a healthy, functioning body. Did I mention this recipe has 44g of protein? 

But for this recipe, it’s simple like all of my other content. Soak the lentils overnight, blend everything up then scoop the batter onto the pan at medium heat, flip after 3 minutes, and enjoy with your favorite dips or salads. 

High-protein Lentil Tortillas

Makes 8 tortillas | Cook time: 10 minutes. Prep time: 4 hours

Ingredients: 

  • 1 cup of whole uncooked red lentils 

  • 2½ cups of water 

  • ¼ tsp baking soda 

  • ¼ tsp salt 

  • 1 tbsp nutritional yeast

  • ½ a lemon, juiced 

Instructions: 

  1. Soak the red lentils in the water for at least 4 hours or overnight. They should enlarge in size 

  2. Once they’ve soaked up the water, add the rest of the ingredients into the blender and blend until smooth. Let the mixture set for 10 minutes. 

  3. On a pan at medium heat, scoop ⅓ cup of the batter into the pan and spread it with a spatula if needed but it should naturally thin out into a circle shape 

  4. Flip after 3 minutes of cooking then cook again. Enjoy!
