Teriyaki Tofu Balls
Some people enjoy reaching for yogurt, fruit, or a protein bar as a snack but I personally find those options really bland. Here is an easy tofu recipe that can be the main source of protein in your meals or a quick bite to keep you satisfied.
This recipe is high in protein and it only takes 5 minutes to make. I used coconut sugar which has a lower glycemic index than regular white sugar and coconut aminos which is lower in sodium than traditional soy sauce.
Teriyaki Tofu Balls
Makes 20 balls | Cook time: 30 minutes
Ingredients:
Tofu balls
1 block of firm tofu
2 tsp coconut aminos
1 tsp garlic powder
1 tbsp curry powder
1 carrot, grated
1 stalk of green onions
1 tbsp ground flax seed
½ cup of chickpea flour
Avocado oil spray
Bootleg Teriyaki sauce
½ cup coconut aminos
½ cup water
1 tbsp sake
1 tbsp mirin
2 tsp garlic powder
1 tsp ginger powder
¼ cup of coconut sugar
2 tbsp cornstarch
Directions:
Press out all the moisture from your tofu block by wrapping it with a paper towel and placing something heavy on it.
On a cutting board, grate the carrots and chop your green onions.
Use your hands to mash together all of the other ingredients until well combined.
Spray with oil and cook in air fryer at 370 for 15 minutes
In the meantime, make the teriyaki sauce. Add the coconut aminos, water, sake, mirin, garlic powder, ginger powder, coconut sugar, and cornstarch together then mix together until the cornstarch clumps are gone. Place on the stove at low to medium heat and stir constantly. You want the sauce to bubble so the sugar caramelizes and the liquid reduces and thickens. Once it’s reduced halfway, remove from the heat. When it’s cooled down, place it into a jar or container and store in the fridge for up to a month.
The tofu balls from the air fryer should be cooked all the way through once the timer goes off. Remove from the air fryer and drizzle with the teriyaki sauce. Serve with rice and greens or eat alone as a snack!
