Japanese Neapolitan Energy Bites

These are my Japanese Neapolitan energy bites that require only 10 ingredients, one bowl, and your hands. Like many others, I went to Coachella last weekend and I am suffering the repercussions throughout the work days. When my body is running on E, I always turn to natural energizing plant foods like these little balls which take literally 10 minutes to put together. They’ll keep you satiated, energized, and feeling a little more human after one bite. These are a great alternative to buying protein bars from the store or chugging coffee before your workout. Full of healthy omega-3 fats to repair your brain, protein to rebuild your muscle, and addictive Japanese-inspired flavors without any refined sugar or unpronounceable ingredients. All you need to do is literally throw all the ingredients together, form them into balls, coat them in your favorite superfood powders, pop them in the refrigerator and voila! You’ll have easy grab and go powerhouse snacks for the week. Thank me later.

Japanese Neapolitan Energy Bites

Makes 20 balls | Cook time: 10 minutes

Ingredients:

Instructions:

1.     In a large bowl, mix together chia seeds, hemp seeds, ground flax seeds, almond flour, nut butter, and maple syrup. You may need to use your hands to mix everything together into a ball of condensed dough.

2.     In four separate containers or bowls, place matcha powder into one, black sesame into one, hojicha powder into one, and kinako into the last container.

3.     Roll the dough into 20 equal sized balls around the size of a ping pong ball.

4.     Use a fork or your hands to roll 4 of the balls into one of the powders then repeat this process for the remaining powders with the balls. You should have 5 balls coated in each powder.

5.     Place in the refrigerator for 15 minutes then enjoy as a quick snack through the week.

NOTE: If the matcha and kinako powder are too bitter for you, you can add one tbsp of sugar to the powders before rolling the balls in them.

If the dough is too wet, add more almond flour until it’s the desired consistency to form your ball shapes.
