Oyster Mushroom Karaage

Ingredients: 

  • 2 pint of blue oyster mushrooms (~3-4 cups) 

  • 3 tbsp shoyu, tamari, or coconut aminos 

  • 2 tbsp sake 

  • 1 tbsp mirin

  • 1 tbsp coconut sugar 

  • 3 cloves of garlic, minced 

  • 1 tsp of ginger, minced 

  • 2 cups of potato starch

  • 1 tsp of salt

  • ½ tsp of white pepper

  • Neutral oil spray 

  • 1 lemon to squeeze 

Directions: 

  1. Shred the oyster mushrooms into smaller bite size pieces with your hands and place into a shallow baking pan.

  2. Combine the wet ingredients, sugar, and aromatics for the marinade (shoyu, sake, mirin, coconut sugar, garlic, and ginger) into a bowl then add your mushrooms in and coat evenly. Cover the pan with saran wrap and place in the fridge for an hour to soak up the flavor. 

  3. In the meantime, combine potato starch, salt, and white pepper into a bowl to make your breading. 

  4. Take the mushrooms out of the fridge once it has finished marinating and toss them into the dry mix until they’re evenly coated on all sides. 

  5. Spray your air fryer with oil and add your oyster mushrooms into the basket to cook at 370 for 9 minutes, flipping halfway through. 

  6. Squeeze lemon juice on the finished product and enjoy!
